Mung Bean Soup/Yusha

Ayurveda has listed many foods as medicines, Mung bean soup/yusha is among the most beneficial of them all!!!!

Mung bean is touted as superfood by many and I can see why. One can have it everyday because of its nutritive value. Excellent remedy in post covid recovery! Here are some of its benefits 1. Strengthens digestive fire so very therapeutic when emaciated. 2. Extremely beneficial as part of regimen for weight loss. 3. Useful in all skin conditions, coughs, colds, asthma. 4. Promotes physical strength and is tonifying to all tissues of body. 5. Excellent therapy food in many illnesses like ulcers, fever, throat and eye disorders. 6. Improves voice quality. 7. Therapeutic as cleansing diet for ‘resetting’ digestive system.
Ingredients and Directions

Directions:

    • Soak ¼ cup green mung beans in hot water for ½ hr to 1 hr.
    • Boil the mung in 4 cups of water till its soft and mushy. Strain. You may add 1-2 teaspoons mung beans to the liquid. This is your mung bean soup/yusha.

Seasoning: heat ½ tsp ghee in a small pot, add pinch of asafeotida (‘hing’) and couple pinches of cumin seeds, add boiled mung soup. Add salt and spices like dry ginger powder, coriander powder , as per your choice. Seasoning makes mung bean less dry and much more tastier. Yusha taken in right amount is balancing to Vata, Kapha and Pitta dosha.
